In Odia we called it Baigana Bhaja.
In West Bengal it is called Begun Bhaja.
In odisha Baigana bhaja is most popular dish prepared in every house. This dish is specially made for pakhala. Childrens also love this dish. Today i prepared simple begun fry dish. When sudden guest came to your house you can make this dish within a minutes.
Ingredients:
Palua Baingana: 100 gms
Besan: 3 tbs
Haldi powder
Chilli powder
Salt
Refined oil
Method:
Wash the brinjal and cut into thin round slices.
Take a deep bowl add besan, haldi powder, chilli powder and salt.
Put little water and mix it well.
Make a smooth paste.
Add all brinjal in besan paste.
Keep it for a minutes.
Heat oil in a pan.
Put the sliced begun in tawa and add little oil on it.
Wait for 2 minutes to turn golden brown.
Turn all brinjal to another side.
When both side turn gold keep in a plate.
Serve this dish with pakhala.
