Odia Style Summer Dish Badi chura.

Ingredients:

2 cup desi badi
2 tsp mustard oil
2-3 curry leaves
2-3tsp chopped Garlic
1 onion chopped
1 tsp Green chilli chopped
1/2 tsp mustard seeds

Method:

 Heat 1 table spoon mustard oil in a deep pan and fry the badi till golden color.

 Keep the badi aside it and crushed it into small pieces.

 Again heat 1 table spoon mustard oil and add Mustard seeds, curry leave and    leave them for splutter.

 Add chopped green chili,garlic and onion. Fry it for 2-3 min

 Then add crushed badi and fry for just for 1 to 2 min.

 Now Badi chura is ready serve it with Odia Pakhal, Steamed rice.

Masala Egg Curry Recipe

Masala Egg Curry is best enjoyed with Indian breads like homemade roti or paratha, and can be served in any of the main meals. So let’s see how to make this delicious curry, with this Masala Egg Curry Recipe.

Ingredients needed for Masala Egg Curry

  • Eggs – 4
  • Onion – 1 cup (cut in small pieces)
  • Tomato – 1 cup (cut in small pieces)
  • Ginger garlic paste – 2 tsp
  • Salt to taste
  • Garam masala – 1/2 tsp
  • Red chili powder – 1 tsp
  • Turmeric powder – 1 tsp
  • Coriander powder – 2 tsp
  • Oil – 3 tbsp

How to make Masala Egg Curry

  • Hard-boil the eggs and remove the shell. Keep aside.
  • Heat the oil in a pan. Once it is hot, add onions and fry on medium flame until they turn light golden-brown.
  • Add ginger-garlic paste and fry for another min.
  • Add tomatoes with a little water, and fry for a min.
  • Add all the dry masala and fry for about 2 min.
  • Add 1 cup water and let it boil.
  • Cut the boiled eggs into halves and add it to the curry and let them cook for a min.
  • Serve hot with roti or paratha.

Today am discus about odia food Cauliflower, aalu Cauliflower fry. This food  is a popular recipe in odisha. In.In India it is served with pakhala ,Rice, Roti etc. It is prepare in some spices, Cauliflower,Potato and onion .Onion potato and Cauliflower is a main ingredient in this recipe.In summer it is served with Odia food pakhala. Also.Also it good for health.


Aalu Cauliflower Fry

Ingredients:

  • Cauliflower – 400 gm
  • Aloo - (Potato) – 150 gm
  • Piaja - (Onion) – 100 gm
  • Cocking Oil  – 3 tbs
  • Haladi Gunda (Turmeric Powder) – 1 tsp
  • Jeera -  (Cumin Seeds)- 3 tsp
  • Sorisha - ( Mustard Seeds)- 1tsp
  • Luna - ( Salt)- as required
  • Kancha Lanka - ( Green Chili)- 2 No
  • Coriander Leave
  • Green Peas - 50 gm
Preparation:


  • Peal the green peas and keep aside
  • Wash Cauliflower  and potatoes Properly. 
  • Remove the skin from the potatoes.
  • Cut into small size  and keep aside.
  • Take 2 tsp cumin seeds and fry slightly and make powder of it and keep aside.
  • Cut the onion into thin slices, slit the green chilies.
  • Heat oil in a pan, when it hot add the mustard or cumin seeds. 
  • When it splutter add the silted green chilies and onion slices.
  • Fry till the onion looks golden brown.
  • Add the Cauliflower, green peas and potatoes in the pan. 
  • Add turmeric powder, salt. Stir well  covered it.
  • Fry it till the vegetables are well cooked . 
  • Now add the cumin powder above it. 
  • Mix it properly and cover the pan for another 2 mins.
  • Garnishing it with coriander leave.

Odia breakfast Puri Aalu Dum

Today am discus about odia food puri aalu dum. This food is prepare by wheat flour , aalu,some spices and salt. It is a most popular dish in India This food is most commonly served at breakfast. It is also served at special or ceremonial functions as part of  vegetarian food.


Puri Aalu Dum

Ingredients :
  • Aata - (Wheat Flour) – 300 gm
  • Cocking Oil -as per requirement
  • Aalu - (Potato)-300 gm
  • Piaja -  (Onion)-100 gm
  • Aada - (Ginger)- 1 inch
  • Rasuna - (Garlic) -15 cloves
  • Tamato - (Tomato)-75 gm
  • Haladi Gunda - (Turmeric powder) -1 tsp
  • Lanka Gunda  - (Chilies Powder ) -1 tsp
  • Teja Patra - ( Bay Leaf) – 2 pcs
  • Aleicha -  (Cardamom)- 2 no
  • Lavanga - (Clove) -2 no
  • Dalchini - (Cinnamon)- 1 inch
  • Luna - (salt)- as per taste

Preparation:
  • Take a vessels and put wheat flour add salt and oil 2 tsp oil and add water as per required . 
  • Make a smooth flour mixture.
  • Make small balls from the above flour mixture. 
  • Make flatter each ball into a round size.
  • Heat oil in a pan, and fry the flatten balls till it turns golden brown color.
  • Peal and cut the onion, garlic and ginger.
  • Make a paste from onion, garlic and ginger. 
  • Then cut tomatoes into small pieces.
  • Peal and cut the  potatoes into cube size and boil it. 
  • Make a powder of the cinnamon, cardamom, clove and black pepper.
  • Heat oil again  in a pan, add the masala paste and then add turmeric powder, chill powder to it.
  • Fry until it change into brown in color.
  • Then add the tomatoes, boiled potato and fry some times.
  • Then add water,salt as per test  to it and fry it properly. 
  • Boil it for 10-20 minutes.
  • Add the garam masala powder and serve with Puri.

Easy Cauliflower and potato curry

Today am discus about Indian food Aloo gobi curry.It  is a dry PakistaniIndian and Nepali  dish made with potato,cauliflower and Indian spices. Other common ingredients are garlicgingeronioncoriander tomatopeas, and cumin. A number of variations and similar dishes exist, but the name remains the same.You can serve it with roti and  rice .


Cauliflower and potato curry
Ingredients:

  • Aloo ( Potato ) – 200 gm
  • Phula Kobi ( Cauliflower ) – 750 gm
  • Dhania ( Coriander ) -2 tsp
  • Tomato ( Tomato ) -100 gm
  • Jeera ( Cumin s ) -2 tsp
  • Dalchini ( Cinnamon ) – 1 inch
  • Sukhila Lanka ( Dry chilies ) -2 No.
  • Aada ( Ginger ) – 1inch
  • Golamaricha ( Black pepper ) -6 No.
  • Luna - ( Salt ) - ( as per taste )
  • Haladi Gunda ( Turmeric powder ) -1 tsp
  • Dhania Patra ( Coriander leaf ) 
  • Aleicha ( Cardamom ) – 2 No
  • Lavanga (Clove) -2 pcs
  • Cooking oil – 4 tbs
  • Garam masala - 1 tsp
  • Peas - 150 gm

Preparation:


  • Remove the  leaves and stem from cauliflower and cut into small pieces. 
  • Peel the potato and cut into small pieces .
  • Heat in a pan,add cumin and coriander .
  • Fry till it turns into light brown color.
  • Peal the green peas.
  • Take cardamom, clove, and black pepper and make a powder.
  • Take tomato, dry chili, ginger, coriander leaf, fried cumin  and coriander and make a pest. .
  • Cut the rest tomato and coriander leaf and keep aside.
  • Heat 1 tsp oil  in a pan, add cauliflower and salt as per taste.
  • Fry till cauliflower turns light brown color and remove it.
  • Then heat 1 tsp oil again in a pan and add the potatoes.
  • Fry it till the potato change brown then remove it.
  • Heat 2 tsp oil in a pan and add cumin when it splutter add the tomato pest,turmeric powder with it. Fry it 5,6 minutes, then add the cut tomato pieces and fry some times.
  • Then add the cauliflower , the potato,green peas and continue fry it properly.
  • Then add some water and salt as per taste cover and boil it 10-15 minutes.
  • Add garam masala and mix it properly.
  • After that remove it and add the cut  coriander and serve it hot .

Odisha Delicious Food Chhena Poda


Odia Food 

Today am discos about odia sweet food chhena poda. It is a cheese dish from the state of Odisha ieastern India. It means burnt cheese in Oriya. It prepare in chhena, sugar, cashew nuts and raisins.It is originated in the Oriya town of Nayagarh in the first half of the twentieth century.We can serve it in any Occasion and Function in odisha.

Ingredients:
  • Chhena - 300 gm
  • Chini - ( Sugar ) - 250 gm
  • Suji - 3 tbs
  • Gujurati Gunda - 5 cardamoms powdered
  • Kaju - ( Cashew nuts broken Pisces ) - 1 tbs
  • Kishmis - ( raisins ) - 1 tbs
  • Warm milk - 2 tbs
  • Soda - (Baking powder ) - 1/4 tbs
  • 2 Lemon juice

Preparation:
  • First take the milk and boil it.
  • Add lemon juice to the boiled milk and stir till the chhena separate.
  • Put this milk in a muslin cloth. Drain out the water.
  • Hang the muslin cloth for 15 minutes.
  • Transfer the cottage cheese to a plate. 
  • Mash well with hands till smooth the cheese  .
  • Add sugar and mix it well. 
  • If the cheese too dry, add a tsp of milk.
  • Add suji and mix it well. 
  • Cover it and stay it for 15 minutes.
  • Then take two tbs sugar in a pan  and hit it. 
  • When the sugar just begins to melt spreads it over the base of pan .
  • Leave it to cool.
  • Rub the cottage cheese mixture again. 
  • Add cardamom powder, raisins, cashews nuts and baking powder, mix it well.
  • Put the mixture into the pan. 
  • Bake in the preheated oven at 180 degrees C for 55 minutes or till the top turns brown .
  • Take a knife through the sides and turn back it on the rack . 
  • Add the refrigerate when it cold serve it.

                                    Kheeri

                                    Today am discus about odia food kheeri. Kheeri is a south Asian dish. This food is prepare by boiling rice. It is a most papular dish in india . This food is prepared in festivals and all special occasions.The term Kheeri derived from "Ksheeram"which means "milk" used in North India, Payasa or Payasam used in South India , and Bengal .In odisha it is a important dish .

                                    Ingredients


                                    •  Chaula - ( Basmati rice ) -  200 gm
                                    •  Milk - 2 and 1/2 liter 
                                    •  Chini - ( Sugar ) - as per taste 
                                    •  Gujurati - ( Cardamom )  - 1/2 tsp
                                    •  Kishmish - ( raisins ) - 2 tsp 
                                    •  Kaju - ( cashew nut ) - 2 tsp
                                    • Kesar - ( saffron powder ) - 1/2 tsp
                                    • Teja patra - ( Curry Leaf ) - 2 
                                    • Jeera - ( coriander ) - 1 tsp
                                    • Ghiya - ( Ghee ) - 2 tsp
                                    •  Badam - ( Almond ) - 50 gm

                                    Preparation

                                    • Wash the rice in water clearly.
                                    • Then hit 2 tsp of ghee in a pan and add Jeera to it
                                    • Then add curry leaf  ( Teja Patra ) with them and fry.
                                    • When it splutter then add the rice with it and fry it 5,6 minutes
                                    • After that add some water, almond and milk
                                    • Then boil the rice with milk clearly in low temperature.
                                    • Add the cardamom Stiring continuously otherwise the milk will get burned .
                                    • When the rice is completely boiled, add sugar as per test and mix it properly. 
                                    • If you like, you may add saffron ( Kesar )  to it.
                                    • It is not compulsory, it is used only to color the kheeri.
                                    • Your kheeri is prepared now.
                                    • Add raisins and cashew nut to the preparation. 
                                    • You may serve it as break first .

                                    Makar Chaula

                                    Today am discuss about odia festivals food makar chaula. Makara Chaula is prepared during the Makara Sankranti Makar sankranti is a Hindu festival celibrated in almost all part of India and Nepal.
                                     It is one of the Hindu Indian festivals which are celebrated on a fixed date 14 January every year (sometimes  may be on 15 January).In Odisha people prepare makar chaula for naivedya to gods and goddesses.

                                    Ingredients
                                    •  Bata Nadia - ( Griend Coconut ) - Medium Size 1 no.
                                    • Kadali -  ( Ripe Banana ) - 1 no.
                                    • Arua chaula - (basmati rice) - 2oo gms
                                    • Paneer - 50 gms
                                    • Adda - (Ginger Crushed ) - 1 tsp
                                    • Chinni  - (Sugar) - 100 gms 
                                    • Khira - (milk) -  1 Cup
                                    • Golamaricha gunda (Pepper Powder ) - 1 tsp
                                    • Akhhu - ( sugarcane small pieces ) - 1/3 cup
                                    • Dalimba - ( Pomegranate ) - 100 gm
                                    • Kakudi - ( Cucumber ) -1 No.
                                    • Seo - ( Apple ) - 2 no medium size
                                    Preparation
                                    •  Soak the rice for a night ,wash and drain it.
                                    • Spread on a plate and allow to dry  for 2-3 hours to soak the watered rice. 
                                    • Peal and cut the cucumber and apple into small pieces. 
                                    • Grind the rice ( make a rice into 2, 3 pieces ) and transfer to a mixing bowl.
                                    • Add grind coconut , paneer , ginger crushed , sugar , Milk ,paper powder and sugarcane mix well. 
                                    • Peel and crush the banana. Add to the bowl and mix.
                                    • Then mix the cucumber and apple pieces.
                                    • Once mix is done add Pomegranate  seeds for decoration.
                                    • Now do puja and serve to all and others to promote our Odia food.

                                    Mushroom curry ( Chattu Tarkari)


                                    Ingredients 

                                    • Mushrooms (Chattu) - 200gm
                                    • Alu (Potato) - 1 Medium Size
                                    • Bilati baigana - (Tomato) - 1 Medium Size
                                    • Piaja (Onion ) - 1 small Size
                                    • Rasuna - (Garlic) - 7,8 cols
                                    • Sorisa - (Mustard ) - 1 tsp
                                    • Jeera Powder - (Cumin Powder) - 1tsp
                                    • Lanka powder - ( Chili Powder) - 1tsp
                                    • Dhaniya Powder - 1 tsp
                                    • Dhaniya Patra
                                    • Kancha Lanka - (Green Chili) - 1
                                    • Jeera - (Cumin)
                                    • Ambula - (Khata) - 2 
                                    • Tela - (Cocking Oil) - 3,4 tsp
                                    • Haladi - (Turmeric) - 1tsp
                                    • Luna - (Salt) - as per teste

                                    Preparation 

                                    • Fell a vessels with water and add turmeric into it.
                                    • Add Mushroom into it and leave for 7,8 minutes.
                                    • Then wash the mushroom clearly.
                                    • Grinde the mustard and garlic and make a peste.
                                    • Fell a small bowel with water and the ambula put into it for 4,5 minutes.
                                    • Cut the mushroom , potato, tomato, onion into small Pisces.
                                    • Heat oil in a pan then add the potato and mushroom  .
                                    • Fry it when the potato clearly fry then remove it.
                                    • Then hit oil in a pan and add cumin into the oil.
                                    • When the cumin splutter add the onion and green chili and fry it.
                                    • When the onion changed into brown in color .
                                    • Then add tomato pics and salt as per teste.
                                    • Then add the mustard and garlic pest.
                                    • Then add Cumin Powder , Chili Powder, dhaniya powder and some water.
                                    • Fry it for 4,5 minutes then add the mushroom and potato .
                                    • Remove the ambula pics into water and add with them.
                                    • Then boiled it 5,6 minutes ,
                                    • After 5 ,6 minutes remove it and serve it.
